The evening begins at 6:30 PM with a glass of Champagne and a delicious amuse-bouche upon arrival. Following that, an extraordinary culinary experience awaits – a luxurious 5-course dinner in our beautiful At Mollberg restaurant.

New Year's Eve dinner

AMUSE-BOUCHE

Seared beef tartare on spiced rice paper with butter-fried shiitake mushrooms and wild garlic emulsion, topped with chervil.

STARTER

Pan-seared scallop with vendace roe, avocado cream, browned butter and pancetta, finished with red sprouts.

INTERMEDIATE COURSE

Cured venison carpaccio with pickled chanterelles, crumbled chèvre, dried lingonberries, balsamic glaze and toasted almond flakes, topped with sakura mix.

MAIN COURSE

Slow-cooked beef fillet with a parmesan croquette, charred carrot, Jerusalem artichoke purée and Madeira jus, finished with chervil.

CHEESE COURSE

Selection of cheeses – blue cheese and Manchego, served with sour milk bread and fig marmalade.

DESSERT

Gateau Marcel with dulce de leche, gin and passion fruit coulis, and candied pistachios, topped with edible flowers.
